Had a few dull things to do, including a brief visit to DT’s new flat to affix a TV bracket to the wall. Got bored during the afternoon so, again, cooking was the answer…Tom Kerridge roast chicken and fennel. Saw the recipe on his M&S-sponsored show a few week’s ago and thought that sounded good so had already got the ingredients in.
Stole a glance at the enigmatic picture of My Jane while it was cooking…she smiled today. No sad triggers. Still don’t fully understand what allows me a “not sad day”!

Recipe notes
- I used an ordinary orange – blood oranges are lovely fruits, and possibly better, but this certainly worked with an ordinary orange I had already
- Pistachios – not sure they really added much apart from a crunch. Wouldn’t have missed them, much as I like pistachios
- Chicory – first time in 30+ years I’ve eaten chicory. No longer the bitter unpleasant salad vegetable that I remembered. Very nice!
- Ricotta. Funny how I’ve never really used it. What a lovely addition to this sort of food.
